Healthy living with keto muffins
Where do you start, what do you take and what do you leave
behind … these days there is so many diets. No wonder people get confused, for
instance you have the keto one (basically an undercover banting diet) then you
have the military diet, one egg for breakfast, one toast for lunch and an apple
for dinner, does not that just sound filling to you. Just to clear the air, I am
no professional. I am just someone that wants to share the things that worked
and did not work for me and give some advice on my own personal experience. You
are more then welcome to share your thoughts on this platform.
Now ladies, ladies
The first thing we need to talk about is “the start” and
with that I mean when are we going to start, this Monday or next week Monday? you
see for me personally the first week on a diet is really a breeze. It is new
recipes you get to try, you feel more energized and you overall just loving the
new you, for the first week. After the first week BAM WHAM!! it slams you out of nowhere, you start to
miss you late night snack before bed, people invite you for dinners and braai’s
and the first thing you think is “a braaibroodjie is not part of my diet” so
you start to cancel plans with family and friends, for the simple reason – you do
not want to fall of the wagon. Unfortunately, no let me rephrase that fortunately
we are human beings that need interaction with our people. Honestly, what is
better than some friends around a braai with a glass of wine in the hand, good
music in the background and good food. You know food is one of the things that
brings people together. So, my point I am trying to make is …we simply need to
find a balance, a certain lifestyle, some sort of a great plan that support our
health and our wine glass (what is a workday if you are not ending it off with
a good glass of wine). Again, remember that is something works for me, it may not
work for you. We are all unique individuals, but this is a platform where we
can help each other and share our ideas.
With all this talking about food it made me in the mood for
a good cup of tea and a muffin (healthy muffin) with only 1.7g carbs per muffin
!! it is like a dream come true in diet land
Chocolate Muffins
Perfect for breakfast or anytime snack!
Prep time: 10min
Bake time: 10min
Your shopping list:

1 cup fine almond flour
·
1 tbsp stevia
·
¼ cup of milk
·
1 large egg
·
½ tbsp baking powder
·
¼ tsp salt
·
Mini chocolate chips or crushed walnuts,
The method:
Preheat oven to 180 C
Grease mini muffin tin
Mix all the dry ingredients together, then stir in the egg
and milk.
Scoop into muffin cups
Bake for 10min or 15 min for regular muffins.
Carefully remove from oven and let it cool down
Go around the sides of each muffin with a knife to ensure
that the muffin does not stick to the pan.
Take out the muffins and ENJOY !!
